Start with a taco bar
A build-your-own taco bar is the easiest way to make everyone happy. You want a spread that covers the classics:
- Al pastor — marinated pork with that unmistakable adobo color
- Carnitas — slow-cooked pork, crisped at the edges
- Pollo and cecina for the table that likes it simple
- Birria — slow-braised and rich, the showpiece
Real tortillas matter. We press ours by hand every morning, and for catering we bring them warm with salsas, onions, cilantro, and lime so guests build their own.
Party trays feed a crowd for less
For office lunches and bigger parties, trays are the move: enchiladas, chilaquiles, rice and beans, guacamole, and chips. Half trays feed roughly 8–10; full trays scale from there.
Drop-off or full-service?
